Mash at 150°F (66°C) for 60 minutes. Boil for 120 minutes. Add the molasses in the last 10 minutes of the boil. Caramelize the table sugar on the stovetop, cool it to room temperature, break it into chunks, and add it to the primary before you pitch the yeast. Ferment in the high 60s to low 70s Fahrenheit (low 20s Celsius) for 30 days. Move it to secondary fermentation for 90 days.

BREWER’S NOTES
This recipe goes nuts when fermenting. I typically lose 15–20 percent of the batch out of the blow-off tube when it’s in the primary fermentor. I force carbonate and then bottle with a counter-pressure filler. I’ve had mash efficiency as low as 35 percent on this, so make sure you’re adjusting for your own system. |

Notes: Heat 3 gallons of water to 166 F. Mash-in grain, mash for 60 minutes at 154 F. Sparge with 3.5 gallons for pre-boil volume.
Collect wort and boil for 15 minutes. Chill to 95 F, purge kettle headspace with C02 and pitch the lactobacillus. Wrap the kettle in blanket and let the temp drop on its own. Sour until the pH drops to 3.3-3.7. After the desired pH is reached, bring the wort to a boil, add hops and boils for 15 mins.
Add hops for 15 mins
Chill wort to 75-90 F, pour into fermenter and pitch the yeast
My Sour Mashing variant:
Mash for 60 mins as above with 4.5 gallons of water, pitch Lactobacillus into mash, purge headspace and maintain temp between 113-120 until pH drops to 3.3-3.7.
Drain to boil pot, boil for 15 mins, add hops for 15 mins |

1.The day prior to Brewing, make 10% DME solution in Erlenmeyer Flask.

** MASH **
PRE-HEAT MASH - 2 gal of Boiling Water
PRE-HEAT SPARGE - 2 gal of Boiling Water
(conduct Simultaneously)
Water Volume: 4.5 gallons for 1.3lb/qt ratio.
1. Prior to heating HLT, check pH of tap water + add Salts/LA to achieve Goal water.

9. Chill wort rapidly to ~70F after completion of Hop Stand.
10. Once temperature is ~70F: place lid on kettle, and allow immersion chiller to rest in wort for another 5-10 minutes (to help settle particles in suspension).
11. Run-off wort from Kettle into Mash Cooler with Hop Cylinder + fine mesh bag attached (at the end of auto-siphon)
12. Gravity feed 5.25gal (5gal mark) of wort from Mash Cooler into Catalyst Fermenter
13. Allow Ranco/Chest Freezer to adjust wort temperature to goal starting temp (cool to 67F).

** FERMENTATION **
1. Beginning Fermentation Temp: 67F.
2. Once signs of Fermentation begin to slow, increase temp by 1F/24hr until 70F.

5. Cold Crash after 10 Days of Dry Hopping to 40F for ~24 hours before transferring to Keg
