Pitched Wyeast 1318 London Ale III Slurry (5 G), and WLP025 Southwold (10 G)
Was done as a concentrated boil (13 Gallons) and diluted to strength.
Plan is currently that we will secondary the beers on top of oak for 3 weeks. The 1318 Batch by Rich will be racked onto French Oak Beans soaked in Scotch Ruby Port and Vodka. The WLP025 Batch by Drew will be racked onto Oregon Oak Beans soaked in Sherry and Vodka. The soaking process protects against infection and adds character to the beer. |

Notes: Add pineapple purée as fermentation slows.
Split dry hop into 2 or 3 additions, add after soft crash to 58F and then warmed to 62F. Run each addition for a day (purge with CO2 while PRV open).
When kegging, add ~1 oz of the vanilla extract (equals ~2 beans) to fermenter (purge with CO2 while PRV open).

Mashed in at 150F with 8 gal at 825am
Whirlpool hops added at 172F (1113am), dropped to 148F after 30 min. Started chilling.
Update 21-May-2020:
Heated pineapple purée to 160ish F for 1 min then removed from heat to cool. Added to fermenter, increased volume ~0.25 gal (liquid weight was ~4.5 lb)
Temp dropped to 55F at 630am on 24-May-2020
13.5 oz dry hop blend prepared, first 1/3 added at 58F (warning to 65F) at 205pm on 24-May-2020 (yeast has dropped out).
2nd dry hop added 130pm on 25-May-2020. Add lasts of hops and 10 mL of vanilla bean extract (10 beans in 120 mL vodka) on 26-May-2020. Cold crash at least 48 hr before kegging.
Kegged on 30-May-2020. |

Notes: - FIRST TIME USING WATER TREATMENT. Used more than the 2 tablespoon gypsome and 1 Tablespoon salt (3 and 1.5) suggested by Jake, who said 2 and 1, but I use a bit larger batch I think.
- Used a colandar to put mash water in. This worked well but top three inches of water were above grain, so gentle stired grain to top. Worked well. Have hot water liquor spout directly over grain.
-OG 1046. 66 percent. Slightly less perhaps due to not stirring spare.
- Bit confused as I used 115 gr for Vienna IPA thinking this would give me 2.5 co2, but the calculator says I should have used much more sugar to get 2.5, so perhaps I did it wrong. But, Vienna carbonation is pretty good and only a bit under carb. So, this time I will do 2.3 co2 for 25 litres at 16C which suggests 132 gr of sugar. Peter suggest 90 gr for 25 litres, so we shall see.
- FG 1009, so 4.9 ABV. Beer tastes good but not terribly hoppy or bitter as expected. Racked into bottles with a bit more carbonation than normal, hop. |

Notes: If anyone is curious about this beer. The measurements for the grain bill are not accurate. This recipe is designed from my Irish Red called French Big Papi Imperial Irish Red. I rinse the mash grains again after making Big Papi. Until I make it I can only assume what I'm going to end up with so just to get an idea of the OG, this beer is a 3rd of the original grain bill. I changed the Hops and Yeast. I was drinking my Lil Papi Irish Red and it seemed to me that a raspberry amber would be delicious. The concept is turn your trash into stash. Since imperial beers leave behind so much converted sugars and have lower efficiencies, the next best thing to do is turn it into another beer. 2 beers for the price of one.. Enjoy!
The water absorption for the original grain bill is 2.7gal based on 0.15gal of water per 1 lb of grain absortion rate. That's a ballpark so I am removing 2.5gal from second rinse of the grain bed. |
