Mash at 152°F (67°C) for 60 minutes or until conversion is complete. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), drop temp to 14C and add the first dry-hop addition. About 3 days later do a cone dump and add the second dry-hop addition for another 3 days. Cold crash to 1C and then do another cone dump.
Package at 2.6 volumes of CO2 and consume fresh. |

Notes: Ingredients
- 1 x Briess CBW Golden Light Extract 1.5L
- 1 x Morgans Wheat Malt Beer Enhancer 1.5 L
- 1 x Gladfield Medium Crystal Malt Cracked 250g
- 60g Amarillo Hops (Pellets)
- 1 x Safale S-04 English Ale Yeast (Fermentis)
Method
- Put 250g Crystal Malt in muslin bag
- Steep Crystal Malt in 2L of water on stove @ 69c for 30 mins
- Take Crystal Malt bag out of water and put in strainer to drain *DO NOT SQUEEZE BAG*
- Sparge bag with 500 mls water @ 69c
- Transfer malt water to large pot
- Top up pot with water to 14L
- Bring pot to the boil
- Once boiling, remove from heat and empty Wheat Malt into pot, very slowly while constantly stiring.
- Return to the heat and boil
- Once boiling, add 10g Amarillo hops and start timer
- Mix every now and then
- At 50 mins add 20g Amarillo hops
- Mix every now and then
- At 60 mins turn off the heat, add 30g Amarillo hops and add Light Malt Extract
- Use an icebath and ice bricks to cool to 20-21c
- Strain and transfer to fermenter
- Top up to 23L
- Add yeast and ferment at 18c

Notes: This version I changed some hops and also the yeast. The yeast is not offered on this list; it is WLP -030 - Tames Valley yeast, an English Yeast. The Norther Brewer was supposed to be Nugget but I was using up resources FIFO.
Review - This beer was made for a camping trip in Indian Mountain. This was the first keg to go and was a crowd favorite. Some notes, I am glad I used an English yeast for this beer. The English yeast imparted a better more full mouthfeel. I would default to this Kentucky Common recipe from here on out as this has the most rounded qualities of any of the versions I have completed yet.

Notes: Water for partial mash: dilute water with distilled or RO water, if needed, to below 100 ppm carbonates (bicarbonate ions (HCO3–) or “alkalinity as CaCO3”), add calcium, if needed, to make 100 ppm Ca2+, use 3:1 ratio of gypsum and calcium chloride for adding calcium ions
(for dilution: filtered tap water)
Procedure:
1. Make yeast starter 2–3 days ahead of brew day.
2. On brew day, heat 4.1 qts. of brewing liquor to 165 °F and mash grains at 154 °F for 60 minutes. Stir every 8 minutes or so, if you can do so without losing a significant amount of heat.
3. Collect around 1.75 gallons of wort. Add water to make at least 4.0 gallons of wort. Stir in roughly 1/2 of the malt extract, hold at 154 °F for 5 minutes, then bring to a boil.
4. Boil the wort for 90 minutes. (If hot break does not appear as big, fluffy flakes after first 15 minutes of boil, add 0.5 tsp. gypsum.)
5. Add hops and Irish moss / whirfloc at times indicated. Add water, if needed, so boil volume never drops below 3.5 gallons.
6. Dissolve remaining malt extract in wort and stir in with 10 minutes left in boil. (You can do this in shifts.)
Option: add Fermax 0.5 tsp per gallon as yeast nutrient, 15 minutes before the end of boil.
7. Chill wort to 70 °F. If using an immersion chiller, swirl chilled wort and let sit for at least an hour (covered) to let hop debris settle.
8. Transfer wort to fermenter, leaving as much hop debris and trub behind as possible. Add water to yield 5.0 gallons.
9. Aerate the wort thoroughly and pitch sediment from yeast starter.
10. Ferment at 70 °F. If dry hopping in a keg, let beer fall (at least mostly) clear before racking.
11. Dry hop for 7 days. Avoid exposing beer to oxygen as much as possible when transferring wort and dry hopping after fermentation.
Double Dry Hopped Option:
Note to make the Double Dry-Hopped version, remove the first charge of dry hops and add a second charge of the same amount. You can use more Centennial. Simcoe, Citra or Amarillo also work really well. |
