SG1070 (SG1060 before recirculating mash and sparge water at 75°C. (Error?)
SG1014 28/09/18 (day 6). Increase temp to 19°C. Tastes very bitter and mildly hoppy flavour/aroma.
SG1012 3/10/18 (day 11). Dry hop 30g Simcoe. Increase temp to 20°C.
7/10/18 (day 15) remove dry hops cold crash to approx 3°C.
10/10/18 (day 18) keg. Force carb to 2.0 volumes.
Tasted 13/10, extremely bitter and full of hop flavour, very impressed with hop utilisation. Mildly malty, no alcohol flavour present. Brew again! |

Color on target
Clarity - slightly hazy
Aroma - very balanced between malty and hoppy
Head - very big white fluffy head....actually a little too much
Taste - very balanced....too balanced maybe. but super drinkable.
Next time:
add some orange peel & coriander
increase candi sugar
increase BU/GU ratio
add aroma hops at 5 min or later
decrease wheat
Mash Step 1: increase from 65 to 66 C
Yeast: swap WLP500 for higher flocculation yeast

Notes: Bring 9 qts of water to 173 degrees, then pour over the grains in mash tun. Overall temp should drop to about 154. Stir then let rest for 60 min. With 20 min left, bring 7 qts sparge water to 170 degrees. Drain mash tun then rinse with sparge water, ending with about 3.5 gallons for boil. |

Notes: Looking to add frozen mixed berries after primary fermentation has eased. Will add them to thermomix and pasteurise on 70c for half hour cool and add directly to fermentor. Should add some reddish berry colour to beer.
Mixed berries = strawberries, blueberries raspberrys and blackberry currents.
Not enough berries added to Change colour. Will omit caramel malt next time. Good head retention with this beer.
Scored poorly 20s in hombrew comp with this one. It needs some major tweeking if not revisit drawing board. |

Notes: At bottling this tasted exactly like a classic English real ale - exactly what I was aiming for. The combination of Wyeast West Yorkshire yeast, Challenger hops, hard tap water with gypsum & CRS (see right), and a typical English recipe including 10% invert sugar has worked beautifully.
Mashing overnight in most of the liquor followed by very quick sparge in the morning gave 82% efficiency and a stronger beer than planned.
I used a whole 100g packet of Challenger hop pellets, adding most at 80 Celsius during the post-boil chill. All hop trub was tipped into the FV with the wort rather than being separated, as I would usually do. This has given the beer a very hoppy nose.
Hands down the best English style ale I've ever brewed and definitely one I will repeat. |

Notes: My first beer I designed all on my own over three years ago. Turned out not too bad. Kept a real nice head (didn't realize not to add so much wheat) with good body and a clean finish. Light hop aroma and not overly bitter. A repeatedly drinkable beer. Good for lawnmowing and thirstquenching. |
