Notes: No matter if your an all-grain or extract brewer, below is my favorite recipe for brewing a Black IPA. Try it. You won’t regret it. (Feel free to sub in your own favorite hops)
Procedure:
Mash at 152° F for an hour. Mash out at 170° F and sparge with 180° F water to make 6 gallons. Heat to boiling and then add 10 HBUs of Sorachi Ace hops.
Boil 45 minutes, then add 0.5 oz Sorachi Ace hops. Boil 15 more minutes and turn off heat and add 0.5 oz of Sorachi Ace hops.
Cool as quickly as possible to 70° F, rack to your fermenter, and pitch yeast.
After 7-10 days, rack to secondary fermenter and dry hop with 0.5 oz of Sorachi Ace hops. After 14 days, prime and bottle or keg.

Notes: 12 kg maiz molido y remojado del dia anterior mas 4 kg pale ale se macera a 75 por 60 minutos y de hi se sube hasta que hierba y se apaga. se recircula y se va a olla cocción
agua de macerado pale ale a 75 para que baje 68 70 ideal 72 para azucares no fermentables y que sea mas dulzona, 90 minutos macerado. al final se agregan 5 kg lactosa.
300 grs cascade - 100 inicio fermentación 100 a los 60 minutos y 100 10 antesde apagar, 100 mas al fermentador despues de terminada la fermentacion. s diluye el lupylo y se da una mini cocci se enfria con cerveza fri y al fermentador . |

Notes: Dry hopping to be done after transfer to secondary fermenter, approx 10 days after pitching yeast.
Added 1/4 tsp of potassium metabisulfite to both strike and sparge water.
Brew day-Grainfather water volume calcs were 20 and 12. First time use of rice hills and appeared to be not enough strike water so increased to 22 and left sparge at 12.
Yeast pitched 9/1- OG 1.060.
First fermenter for 12 days- SG .10 - transfer to 2nd fermenter and dry hop 3 days only - FG .010
Kegged and carbonated for 40hrs at 230 kpa - tasted straight off the gas.
Easily the best beer I have brewed in 10 years. |
