Notes
This is more or less my Saison but with a bit of darker backbone to let the bottle condition of 8 to 12 months end with a smoother finish.
Bramble, Blood, & Bone
Bière de Garde | 7.6% ABV
Profile: Bloodleaf Mahogany • Wild Honey • Peppery Snap • Bone-Dry Finish
The Story: Brewed in the deep shadows of the Towering Wood, this reserve ale is a testament to the quiet power of time. A late addition of wild honey and a sharp, peppery fermentation are mellowed by a patient 8 to 12-month sunless conditioning. Pouring a rich bloodleaf-mahogany, it wakes from its long slumber with a dangerously smooth, bone-dry finish.
Deep roots. Dark pours
