Calculator called for chalk additions for mash , boil and sparge. I only wanted additions to mash and boil. I did not add to sparge so need to calculate actual Ca / CO3 levels. CaCO3 is 40% Ca and 60% CO3 Mash: Calcium - 5g CaCO3 in 5 gallons is (5x.4)/(19000g/5gal) x 1000000g/ppm = 105 ppm. If 50% solubility assumed then 52 ppm Ca. Plus innate: 52 +20 = 72ppm Ca Carbonate is (5g CaCO3 x.6) / (19000/5 gal) = 159 ppm. At 50% solubility ~ 80 ppm Ca. To convert to HCO3 = 2 x 80 = 160 ppm! Adding the innate levels we get Ca 52 + 20 = 72ppm Ca and 160+ 80 = 240 ppm HCO3 Boil: Calcium: 5g CaCO3 in 5.5 gallons is (5x.4)/(21000g/5gal) x 1000000g/ppm = 95 ppm. If 50% solubility assumed then 47 ppm Ca. Plus innate: 47 +20 = 67ppm Ca Calcium Carbonate: (5g CaCO3 x 0.6) /(21,000 g/5/5gal) = 143 ppm CO3 and 50% is 70 ppm. Bicarbonate is 2 x 70 = 140 ppm. plus 80 ppm innate = 220 ppm HCO3 Assume that mash water is diluted by 50% with sparge water into the boil. Total Ca is: (52ppm x 0.5) + 20 + 67 ppm = 113 ppm Ca Total HCO3 is (160 x .5) + 80 + 220ppm = 380 ppm Conclusion : over fortified Ca and HC03! Water Calculation is questionable and landed to verify salt additions by a separate method. |
