Hidegkomlót 2 lépcsőben tennék a sörléhez:
1, az erjedés utolsó 1-2 ballingjánál (hogy segítsen a dry hop creep elkerülésében). Itt mehet nyugodtam kb. 3-4 gr/liter. Ez kb 80 gr komló, amennyiben a fermentorban kb 24 l sörlé van.
2, A kb 4 fokra lehűtött sörlébe. Itt is bele szoktunk dobni 3 gr/ liter komlót, ami kb 70 gr komló.
Főzés menete:
Becefrézés: 35 C fokon, melyről emeld pihentetés nélkül a hőmérsékletet 66 C fokra. Itt pihentetés következik 60 percig. Majd emeld a hőt 72 C fokra. Itt újabb pihenő 15 percig. Kicefrézés 78 C fokon.
Élesztő: US-05. Kezdetben 18C fok, majd érdemes elengedni az erjedés végefelé 20-21 C fokra.
