Notes

Flame out hop additions - add just after flame out, let steep in hop bag x 20 min, then remove bag, and rapidly chill to 68F or below.

Once at 68F, remove chiller, cover kettle with lid and let sit undisturbed x 1 hr.

Dry Hops:
Add DH near end of fermentation (on day 7-9) x 5 days of contact:

  • use muslin bag, 2 oz in each
  • after 5 days, loosen lid just enough to pull string, secure bag hanging near lid and out of beer (in reality, the bags were still 1/2 in the beer).

    New post fermentation clarification process (this worked, 2nd pint was bright beer with minimal haze after 12 days in the keg):
    1. Cold crash x 72 hours at 35-37F in kegerator
    2. Add gelatin, wait 48 hours.
    3. Keg beer
    4. Add 6mL Biofine Clear into gas port, add CO2 to create seal (12 PSI) but don't fully carbonate
    5. Chill x 3-4 days
    6. Pull off 1 pint and fully carbonate
