Vergisten met WLP500 Chimay.

vergisting starten op 18C, daarna langzaam naar de 23 graden brengen.
WLP500 zou erg pruim/kersen moeten zijn, lijkt mij erg lekker in een bier als dit.

Dark red/brown color, dark malts are coming through nicely. I lost control of the ferm. temp and temperature rose to 36C during the tail end of fermantation. There's almost a savory aspect to it (because of this i think) that's mellowing out after a few months. Very complex beer that needs a long time to mature.
