Bananas were frozen before beeing pureed with banana rhum. The puree was brought to room temperature, sprayed with StarSan and added directly in the fermentor.

Notes: Mill the grains and mash at 152°F (67°C) for 75 minutes.
Recirculate until the runnings are free of particles, then run off into the kettle. Sparge and top up as needed to get about 6 gallons (23 liters) of wort, depending on your evaporation rate.
Boil for 60 minutes, adding hops at the start of the boil.
After the boil, chill to about 65°F (18°C), aerate the wort, and pitch the yeast. Ferment at 65°F (18°C) for 7 days, or until fermentation is complete and gravity has stabilized, then allow a free-rise to ambient temperature for 2–3 more days.
Crash, package, and carbonate to about 2 volumes of CO2.
Mash pH of about 5.5–5.6 if possible; |

27/05/2025 Failed the above already after this hot spell of weather.
First yeast Slurry failed. 4 days later put in a Nottingham Ale yeast Slurry. Get out of Jail free yeast good for most beers. Started within 12 hours.
Achieved 46L in fermentor at 1.059. FG 1.012 82% efficiency.
Strong taste of grain and alcohol which has now settled. Nice beer. Bit too strong. Does have a strong after taste, not an off flavour. Beer was left overnight to cool with all the hops in the beer.

Notes: Cool to 50 F and pitch yeast.
Raise to 58 F over the next two days.
Ferment until gravity stabilizes = 3 days of same reading.
Raise temp to 68 and do a Diacetyle rest for 2-3 days.
Lower temp to 32-36 at a rate of 4 degrees/12 hours and lager for a minimum of 2 weeks.
Another option is to immediately lower temp to 32-36 after DR. Some say a gradual cooling doesn’t stress the yeast, but I did not experience that.
