Notes: Mashing Instructions:
“Simplified” Version of Cantillion Turbid Mash
Heat 6 gal of water to 140 degrees. Shoot for a strike temperature of 113F after doughing in. Rest for 10 minutes.
Add approx. 10 gal of boiling water over 5 minutes. Stir all the time. Stop when you reach 136F degrees. Your mash will be very soupy.
Remove 2 gal of soupy liquid from the mash tun and heat in a 2nd kettle to 176F degrees. Keep it there for now.
Add up to 12 more gallons of boiling water to main mash tun until it gets up to 150F degrees. It will be even soupier now. No rest needed here.
Transfer another 10 gallons from mash tun to 2nd kettle. Try and maintain temperature of 176F. The main mash will be resting at this time.
Add up to another 12 gallons of boiling water to bring mash tun to 162F degrees. Let it rest 15 minutes. It will be very thin.
Run off as much liquid as you can from mash tun into boil kettle and start boil.
Transfer enough liquid from the 2nd kettle to the mash tun to get to 167F degrees. Rest for another 15 minutes. Any remaining liquid in the 2nd kettle should be added to the boil kettle.
5 minutes into the rest in step 8, start recirculating the wort to “clarify” it. Sparge with 180 degree water until gravity falls to 1.005. You will be collecting more than 40 gallons.
Boil for somewhere from 2-4 hours until your gravity climbs up to at least 1.050.
Yeast:
Pitch with White Labs 570 (Golden Ale yeast). Fairly neutral for a Belgian. Ferment in the high 60's.
In 2 months, pitch Pediococcus Damnosus. Ferment in the 70's or 80's.
In 4 months, pitch Bret. Lambicus and Bret. Bruxellenis Ferment in the 70's or 80's/
Add fruit or additional wort if desired at 2 month mark. You can add to an oak barrel, but that barrel will never be available for any non-sour beer in the future.
Plan on aging a minimum of one year. Three years are better. |

Combine the concentrate and the honey in your fermenter. Pour in the water to bring the total to the 5 gallon mark.
Follow the staggered yeast nutrient/energizer procedure. You can add in a half teaspoon of yeast energizer and a half teaspoon of the yeast nutrient before you pitch your yeast.
Then, uh, pitch your yeast.
After that, you will need to mark time and follow this schedule:

Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient 24 hours after fermentation begins
Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient 48 hours after fermentation begins
Add .5 teaspoon yeast energizer and .5 teaspoon of the yeast nutrient after 30% of the sugar has been depleted
After primary fermentation is over, rack to another cleaned and sanitized carboy and introduce the oak cubes. I like to steam my oak cubes for 15 minutes before I put them in the carboy.
How long you age it on the oak is up to you. I think I am going to go for a long time on the oak to see how much flavor I can get out of the cubes. |

Notes: 3 gousses extraits Vanille: rajouté 5 min avant le Flame Out.
150g Noix de Pecan: grillé au four à 200°C pendant 15 min pour extraire l'huile à ne pas mettre dans le moût (peut donner de la "head retention" à la mousse).
Flame Out en chaussette pour stériliser, puis rajouter sans chaussette dans la moût pour la fermentation primaire pendant 2 semaines.
DI: 1,092.
RESULTAT: bière assez bonne aux bons goûts de malts mais la Vanille ni la Noix de Pecan ne ressorte assez.
Après quelques semaines la bière est plus gourmande et "sucré" mais il faut mettre le double (au moins) de gousse de vanille pour faire ressortir l'arôme.
La Noix de Pecan? Pas obligatoire d'en remettre car elle n'a pas apporté de goût. |

Notes: Brewhouse efficiency was actually higher than stated as the inverted sugar (golden syrup) was added after the boil, directly to the fermenter. I can't seem to account for that in the recipe builder.
The OG was lower than I had originally planned. I was aiming for 1.067. I think my normal 80% efficiency was hit slightly by the larger than average (for me at least) grain bill . I had initially envisaged a 23L batch but pitched a 2L starter at high krausen. This again lowered the OG somewhat as it diluted the wort with much lower gravity starter. This is also why I included 200g of DME in the recipe. This is actually from the starter, not the beer.
When checking the gravity after 7 days and before dry hopping, I was down to 1.008, so much better attenuation than is suggested for this yeast. |
