trying to make cider again! got 1 gallon cider from chiles peach orchard this afternoon. plan is to :
* SCRATCH heat 1/2 gallon to medium heat (??? temp)
* SCRATCH -----add 0.2 lb brown sugar----
* add 1tsp pumpkin pie spice
* 1 tsp yeast nutrient
* ferment with half pack of us05
* keg and carb and put on draft
leaning toward leaving out the sugar. seeing online the cider unfermented might be in the 1050s and may ferment down to 1000 making it 6% out the gate so more than likely sugar is not going to be needed in the base!!!
some abandoned ideas / other ideas for next time
* lutra
* raisins
* apple skins
* proper back sweetening
* dropping yeast nutrient - maybe yeast will stall and leave some sugar
* bourbon oak aged imperial apple cider / apple wine

Notes: All-malt Munich Oktoberfest Marzen
90 min boil time - 8.5 gallon plastic primary w/airlock
Starting with 8.0 gallons water - Batch size: 7.5 gallons
Ingredients:
8 gallons double-purified water
2 tsp burton salts
2 tsp irish moss
10 lbs Munich DME
2.4 oz hallertau mittelfruh (90 min)
0.8 oz hallertau mittelfruh (20 min)
After boiling, wort was placed in ice bath.
Then cooled to 45 F and placed in beer fermenting refrigerator.
Yeast pitched at 45 F and once beer reaches 47 F - fermentation Begins. Fermented in primary for 3 weeks at 48 F.
Bottled using DME for priming.

Notes: This is an experiment. Follow at your own risk.
Clean and sanitize equipment.
Use a sanitized jar with a lid to begin starter yeast
Measure out water into mash tun and heat until 60 degrees
Measure out honey into hot water. Mix out any honey crystals. Maintain at 50 degrees for 20 minutes to eliminate any wild yeast.
Pour into the fermenter and mix in cool water.
Place Ispindel in the fermenter and turn on the heating belt and switch.
When the temperature sits between 20-25 pitch the yeast.

Experiment Notes and Questions-
Ispindel not getting a good signal in honey,
No activity at 72 hours.
Use two yeast packets
Calibrate thermometer prior to boil. The thermometer was inaccurate and the honey may have reached as high as 80 degrees.
Fermentation is very slow. At this rate, it would take 6 months to complete. on 28/08 I needed to open the fermenter and recharge the ispindal. I took the opportunity to add 5gs of wine yeast nutrient and I added 100gs of raisens to the fermenter, and degassed. The colour and smell are pleasant and mild.
29/08 - fermentation has sped up. dropped 1 SG overnight.

Notes: Mash and Sparge as usual. Boil for 5 minutes. Chill to 110f. Add lactic acid to get 4.4-4.7 pH, (5mL). Add entire carton of Goodbelly Mango. PURGE KETTLE WITH CO2. Seal kettle and leave at 110f for 1-3 days, depending on desires tartness. Taste test- sweet and tart like lemonade. Check pH, 3.2. Boil for 60 minutes to eliminate DMS.
