Heat 2.5 gallons of water in a large pot to 155°F. Place the Crystal 40 malt and flaked corn in a muslin bag and steep them in the water for 30 minutes.
Remove the bag of grains, add the DME and bring the water to a boil. Add 1 oz. of Cascade hops and boil for 60 minutes.
In the last 5 minutes of the boil, add 1 oz. of Willamette hops and 1 oz. of dried red chili pepper flakes.
Remove the pot from the heat and let it cool to around 70°F via an ice bath.
Add 2 gallons of cold water to the primary fermenter, and then pour in the cooled wort.
Add more cold water as needed to bring the volume to 5.5 gallons.
Pitch the American ale yeast into the fermenter and seal it with an airlock.
Ferment the beer for about two weeks at a temperature between 65-70°F, or until the specific gravity has stabilized.
Transfer the beer to a bottling bucket, mix in ¾ cup of corn sugar, and bottle the beer. Let the beer carbonate for about two weeks at room temperature.
Chill the bottles and enjoy your homemade spicy ale with an old-west influence!
Note: Be sure to sanitize all equipment thoroughly to prevent contamination. Also, be careful when handling chili flakes, as they can cause skin and eye irritation. Adjust the amount of chili flakes to your personal taste, as some like it spicier than others. |
