perform primary at 50 F until fermentation starts to taper. Slowly ramp up to 63 for diacetyl rest and let at 63 for a few days. Slowly chill down to 48 before kegging and storing in fridge, then moving to lager fridge.

Notes: Fermentation:
- cool wort to 50 degrees, pitch yeast
- ferment at 50 degrees until 50% attenuation, about 5 days
- raise temp to 66 degrees until active fermentation completes, between 4-10 days (get rid of diacetyl)
- once FG is reached, remove yeast cake, and lager for 2-4 weeks at 32-34 degrees |
