Every year on my birthday I brew up a Barley-wine, but then have to wait several months to drink it, way after my birthday. So, this year I brewed a Wheat-wine (Barley-wine with a large proportion of wheat) six months before the date to make sure it was done in time. It was done nice and early…too bad it didn’t last! I heard the term “Wheat Wine” thrown around, so I did some research on the topic/style. The best resource I found was “Brewing with Wheat” by Stan Hieronymus. Chapter 11 is entirely on the subject, and titled Two Recipes for Wheat Wine (pgs. 141-145). It’s a fun “Style” in progress, so feel free to do what you want with the recipe: Ferment with any yeast or different types of Wheat Malt… Also, Wheat-wines will age differently and quicker then normal barley-wines… probably because of the wheat!

Notes: Do not use an airlock! See https://www.maltosefalcons.com/tech/guide-saisons-and-saison-yeasts about backpressure issues with WLP565. Well, that being said, just don't fill the airlock as the lid will do a better job keeping anything out of the fermenter.
Start fermenter at 19C for 3 days. Every day increase by .5C until 26C at day 17. Shooting for 1.008 and 83% attenuation as I am hoping for a slightly dry Saison to balance out the CaraVienne.
Will be using Tesco Ashbeck for the water.
Going with a 2L starter and will be setting aside one jar for a future batch.
This was an awesome batch of Saison. The Helles that was on tap almost didn't get touched until this was finished. |

Mash in 15 gallons at 165.dropped to 158.stirred to bring temp down to 156. Dropped from 156 to 152 during hour mash.
Pitch yeast at 85 degrees.
Final gravity 1.069 @ 79 F
Combined 10 extract grade madagascar vanilla beans in 250 ml ever clear 151 proof. After extracting 1 week, on 6/12/206 add to one secondary fermentor (5 gal.) 30 ml extract with 2 chopped vanilla beans. Added another 50 ml extract with another 2 vanilla beans 1 week before bottling. |

Notes: efficiency came in at 72%, better than expected of 68. Batch sparge with slow run working better than previous continuous sparge. All EKG added as FWH, but listed as added to boil to ensure IBU calc is correct. prolonged secondary fermentation brought attenuation higher than expected, but still refuses to clarify. Bottling sample shows sharp bitterness for style, should subside in a few months. |

6/28/2015 1.010 SG rack into plastic bucket with 6 lbs sweet cherries added brett. lamb. no starter.
8/1/2015 popped lid on bucket, cherries were floating and looked brownish and pruny. no pelicle. tasted a little sour tart and acidic. minimal brett flavor. Appley sort of malic flavor. Dry. Added another vile of brett. lamb. to top of fermentor, no stir. |
