| Notes: I went with a bigger grain bill than the standard berliner weisse to make it more alcohol. I added lactic acid to the fermenter to help lower the ph for healthy fermentation for the lacto. I added some classic german hops during 60 minute boil to give it a nice fruity and spiciness. While the dry hop of galaxy will add a modern twist to a very traditional yeast and grain bill of the berliner giving the beer bursts of tropical fruit. I chose the wyeast labs berliner strain because it has the classic combination of lacto and brett, the lacto giving some nice acidity and brett imparting slight funk. The strain also includes sacch cerevisiae. I want to follow their guidelines and age the beer in stainless steel for 3 months to give the yeast more time to produce the ideal characteristics. The grain bill will give a light haze because of the wheat while the pilsner will support the beer with a light bready/dough character which will play nicely with the sour from the fermentation. The beer will ferment between 68-72 degree F. |

sample gravity 1.010, pH 4.0, abv 6.56 prior to fruit addition- soft mouth feel, not very flavorful, very slight almost bitterness but think its more acidity/phenolic characteristic
Like the mouth feel. Touch of acidity but would not call sour by any means.
Prior to fuit: gravity 1.060 -> 1.010, delta .050, abv 6.56, pH 4.0
Post fruit addition: purge with CO2 to 10 psi, fermentation temp 68F, gravity 1.020 to 1.008 for abv for 1.58%
Total abv 8.14%.
Adjust pH from 4 to 3.6 with 1.45ml lactic acid added to keg.
Notes: very easy drinking but body too light and not enough residual sweetness. Not much fruit flavor. In the future shoot for higher final gravity, probably kill yeast off then add puree to preserve fruit flavor.

Notes: Unbrewed yet. First all grain. Hopefully a drinkable but repeatable recipe for experimentation.
Made several mistakes on first all-grain. Left a lot of sugar in the mash and way undershot boil volume. Had to add water in the fermenter. OG 1.058. FG1.003->7.22%. Best yeast growth ever. 2nd batch with aeration rig. Tastes like a pilsner. Extremely drinkable, but not really a tripel. |
