| Notes: For our tastes, the caramel malt was a bit strong. That needs to be backed down on future iterations, perhaps 8%? Other than that, it was a solid brew. Got a lot of good comments from our customers. 1 particular customer is obsessed with Karben4's Fantasy Factory and he said this was right up there with that. But overall the hop combo was amazing. The 1320 hop brought some amazing fruity notes to the table. |

Notes: This is a rebrew of a beer that went quick (as in one night) a couple years back. I hope it turns out just as well.
The second dry hop addition will go in the keg.
5 gallons made it into a keg and I had enough left for 4 bottles. The bottles cleared nicely(I used 1 clear bottle so I could see what was going on) the keg seems to be staying hazy and delicious. The hop character of the first pour is amazing. It lacks some bitterness from what I remember from the first time... I am going to sum that up to improved cooling since getting a counterflow chiller. I will up the 60 minute addition next time I brew this for me... for most people, just fine as is. A hazy hop bomb IPA!

Notes: Modeled after Ballast Point homebrew recipe for Imperial Red Ale scaled down. Going for crisp and bitter red ale with some nice malt characteristics and hoping the dank/strawberry qualities from Strata play well.
Using Lallemand Bry-97 instead of Bell's House yeast and hoping this will be my new house clean ale yeast. Easy to use and will look to start top cropping or stepping up yeast to save from batch to batch.
ALDC at Pitch and with Dry hop post completion of fermentation. Drop to 60-58 degree for dry hop for a day or two and then crash. |
