Notes: To brew this Fresh Squeezed IPA clone, use 1 g/gallon gypsum to treat distilled or reverse osmosis water. Mash grains at 150°F (66°C) for one hour. Do a 90 minute boil. Steep flameout hops for 10 minutes before chilling.
Pitch cooled wort at 67°F (19°C) and allow temperature to rise naturally to 70°F (21°C). When fermentation is complete, dry hop in primary fermenter for five days.
Drink it as fresh as possible (~2-3 weeks after packaging) for maximum late hop character. |

Notes: This was a fun experimental beer I brewed. The concept was to double the hop additions throughout the boil, then do the opposite throughout the dry hop phase.
The final two hop additions are keg hops.
The beer tasted very similar to Apocalypse IPA and will be a nice substitute now that 10 Barrel sold to Bud. |

SG1070 (SG1060 before recirculating mash and sparge water at 75°C. (Error?)
SG1014 28/09/18 (day 6). Increase temp to 19°C. Tastes very bitter and mildly hoppy flavour/aroma.
SG1012 3/10/18 (day 11). Dry hop 30g Simcoe. Increase temp to 20°C.
7/10/18 (day 15) remove dry hops cold crash to approx 3°C.
10/10/18 (day 18) keg. Force carb to 2.0 volumes.
Tasted 13/10, extremely bitter and full of hop flavour, very impressed with hop utilisation. Mildly malty, no alcohol flavour present. Brew again! |

Notes: Do not bother with Irish moss or other kettle finings. Chill the wort rapidly to 68 °F (20 °C), let the break material settle, rack to the fermenter and aerate thoroughly.
Pitch ten grams of properly rehydrated dry yeast or use two liquid yeast packages. Alternatively make a 2 qt. (2 L) starter using one package of liquid yeast. Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation. |

Notes: Heat 1 Gallon water to 110 F and mix with Honey in a 7 Gal fermenting bucket. Shake to thoroughly mix and aerate. Add yeast nutrient and additional water 1 Gallon at a time, aerating after each addition, to a total of 6 Gal.
Use 1/4 cup of must to rehydrate Lalvin D-47 yeast. Chop raisins and cranberries, and add to must. Add yeast; primary fermentation should take between 14-21 days.
Rack to secondary with 2 Lbs of cranberries, ginger, orange peel, and cinnamon in a sanitized mesh bag for 10-14 days.
Rack to tertiary with pectic enzyme and fining agent for 7 days. Cold Crash if necessary for clarity before bottling. Add Potassium Sorbate at bottling to kill yeast and backsweeten if necessary.
