Notes: Making 4.4L starter@1.037. Gets us about 756B cells. Looking for 942B. Extra pack to pitch with starter gets us close
pH around 5.35 - right in the range!
Collected just over 14g before the sparge ran out - topped up to 15.5g. with our extra sparge water and the gravity is 1.059.
Starting - 1.070
Ending - 1.008
Pre-boil - 1.059
O.G. - 1.070
Kind of a snafu with the hop rocket. Tried to fill it twice - bad idea. Also clogged it once, the cone in the boiler slid into the siphon - over all not a great effort. Brought it down to 62, aerated for 8 hours then pitched. Activity apparent the next morning.
Fermented out in about 7 days - crashed to 37 over a few days then dry hopped with 3 oz for one day and 3 oz the next day. Out after one day each. (Purged the submarine with CO2 each time)

The London ale yeast made a massive haze(typical with highly hopped beers) and some banana esters. This would be much better without the caramunich and 60L.
Fruity and pine notes.
Smooth and drinks easy.
If I made this again I'd use 05 or 1056 yeast and add a bit more bittering hops. |

Notas de Cocción:
Inicio el macerado y corrijo pH, Ok, clavado en 5.2!
Luego de 30 minutos comienzo a recircular por otros 90 minutos para lograr un mostro cristalino.
Comienza la etapa del lavado, mientras envío el mosto a la olla de hervor. Malas noticias... el mechero no me calienta el mosto a mas de 95°C... Decido hervir mas tiempo. Objetivo: Subir mas la densidad y que coagulen bien las proteínas. A su vez, busco que se evaporen compuestos no deseados.
Luego de 2 Hs, al preparar el fermentador, arme mal las canillas y me perdían tuve que hacer malabares se me rompió la torta del trub en la olla de hervor... aprox 6 litros de merma en total...
Termine con 51 litros (de los 56/57 esperados)...
Prepare las levaduras, hidratándolas y las inocule a 21°C (prefiero inocular en 18/19... pero no llegue a enfriar tanto (punto a mejorar).
A las 8 Hs ya había actividad en el airlock! A las 24 Hs el pH ya había bajado a 4.5
Al 3 día, con la densidad en 1.016, realizo el Dry Hop (que aromas!!!) y le libero la temperatura al fermentador hasta que llegue a 20°C (Fermenté a 17°C)
Al 5° día, inicio cold crush de a etapas. (1° a 12°C, luego a 8°C y por ultimo 2°C durante 2 días)
Bajo a barriles, clarifico con gelatina sin sabor (ya no es mas vegana esta cerveza... perdón). Conecto CO2 en los barriles y los dejo a 1°C por 5 días. Son barriles de 20 litros, y por experiencia se que tardan 3 días en carbonatar!
Dia 13: Mido pH 4.3 y densidad 1.011.
Quedo HERMOSA!!! Clara, cristalina, aromática, muy sabrosa. Todavía faltan detalles a mejorar, pero estoy muy conforme con el resultado.
Observaciones:
Tengo que mejorar el agua de proceso para bajar los sulfatos y que no se realce tanto el amargor del lúpulo.
Por otro lado, mejorar el mechero de la olla de hervor.
Y las canillas del fermentador (siempre son un problema... pero esta vez fue error mío - Check).

Consejos:
Lavá bien el vaso o copa, con una esponja especial para tus vasos. Enjuagalo y servi la cerveza entre 4 y 6°C, con espuma!
Miralo, senti el aroma, toma un trago, y respira! (si, eso se llama placer!)
IMPORTANTE tomar agua entre copas.

| Notes: Pitch yeast and ferment at 68F (wort temperature) for the first 3-4 days and then let it free rise to as high as 75F. Add dry hops once fermentation is nearing completion (i.e. 5 points from final gravity). Steep hops for 3 days while fermentation finishes. Assume fermentation is done if the gravity does not change over ~3 days. Rack to keg thats been purged with CO2 and then chill to near freezing while carbonating at 2.5 to 3.5 volumes of CO2. |

I got horrible extraction.
I ended up adding three lbs of wheat dme to get to my final gravity numbers.
I am not adding DME to the recipe. Keep a bag of it close in case you have to fix your beer on the fly.
I had to boil three hours to get to my correct gravity number. |

Notes: CHERRY HOOKER
Mash at 153°F (67°C) for one hour and run off as usual.
Bring the wort to 200°F (93°C) for 15 minutes. Cool the kettle down to 95°F (35°C). Add food-grade lactic acid to achieve a pH of 4.7. Pitch 8 pills of Swanson Lactobacillus Plantarum. If possible, bubble CO2 through the wort and blanket it with CO2. Our pH was at 3.69 16 hours later and at 3.30 (our target) 40 hours later.
Boil for 60 minutes, following the hops schedule. Add a French Oak infusion spiral (1" x 8", medium toast) to the primary fermentor and rack onto it at yeast pitch.
Ferment at 68°F (20°C), and on day 7-10, depending on fermentation activity, rack into secondary fermenter on top of 2kg sour cherries.
Taste daily after 48 hours until desired taste and gravity are reached.
Carbonate to 2.5 volumes of CO2. Final gravity may be a bit high (1.022 on the commercial batch), but fruit tannin and acidity should cut that quite a bit and prevent excessive sweetness.
