Denny Conn's Rye IPA
Hop and Spicy!
This is another recipe created by Denny Conn and made popular around the various internet forums. It is a hoppy, refreshing, West-coast style IPA with the added spicy layer of Rye.
It is quite light in color and has an easy-drinking, medium body. The hops provide a flavorful hop base while not being too biting.
The Beer
This IPA starts with a somewhat standard bill of 2 Row and some 60L Crystal for color and a bit of caramel and sweetness. Interesting, Flaked wheat is added for a bit of texture and, along with CaraPils, helps head retention. What makes this beer somewhat unique is the addition of 3 pounds of Rye. Rye adds a spicy, somewhat crisp, and perhaps peppery flavor to this IPA.
The hop treatment is US West Coast with Columbus and Mt. Hood hops providing the clean, citrus, refreshing bitterness. The First Wort Hopping technique is supposed to impart a smooth aroma/taste addition that is comparable to about a 20 min. addition.
The hopping schedule is finished off with a dry hopping addition of Columbus hops to give this beer a refreshing taste and aroma. |

Notes: Brewed 12/17/16. Strike water was 169F and hit right at about 152/153. Only recirculated a half gallon because of this. Sparge went well and nothing stuck was able to get full volume without cutting as it didn't fall below 2 brix, got close though. Kettle efficiency was 82% which is a little lower than expected. Hit everything on the nose including the gravity. Temp cooling went faster due to low OG I believe but still need to look into a different temp cooling method to quicken things up. Pitching temp stabilized at 63F. 12/18 temp was about 62F so I cooled to 61F. 12/19 and 12/20 temp was sitting at about 62F the whole day. 12/21 I put a heater into the beer and kicket it up to 68F. Out of the swamp bath on 12/26/16. 1/5/17 I transferred the beer into the keg and added the flavor grapefruit compound from Amoretti. Attenuation was a little lower than expected but that is ok, looking for something sweeter anyways. I went with 4oz of the compound. Directions said 1/2 - 1% concentration and 4oz was about 1/2%. Bottled on 1/9/16 and carbed to about 2.9 volumes. Won an award in the BAM World Cup of Beer |

Notes: Grain Bill oats- just use old fashioned Quaker oats
Mash Temp- Its better to mash on the higher side and try to get a "sweeter" or less ferment-able beer usually 154-158.
Mash pH of 5.0-5.4. Correct acidity with lactic acid 88%. Measure after mash in.
Water profile- Maintain a 1:1 chloride to sulfate ratio at a level of 150 ppm. These are the only two water variables that should be monitored.
Conical Fermentation, conditioning and packaging process
1. Ferment for 5-10 days before adding any dry hop. The first 24 hours of active fermentation are the most critical in terms of proper temperature control (66-68°F). Once fermentation starts to slow, let the fermenters free-rise to 70-72°F. This ensures fermentation fully completes and scrubs out any unwanted off-flavors.
2. At day 7-8 after yeast pitch, Soft crash fermenter down to 55-60°F to allow the yeast to settle into the cone of the conical. Using dump valve, slowly remove yeast over 2 day period.
3. Cap/seal fermenter at soft crash temp, add dry hop. Purge and pressurize to 7-10 PSI and let sit for 2-3 days.
4. Cold crash to 35°F, under pressure for 2 days. Remove dry hop from dump valve over 2 day period.
5. Packaging- Do not let beer interact with oxygen. This will result in oxidation and a ruined product. Perform a closed transfer to a keg that is scrubbed of oxygen/air. You can do this by filling a keg with starsan and push it out with CO2. This will leave you with a keg full of CO2. |
