Notes: Very pleased with how this turn out - clean, clear, properly black with as a modest roast flavour on top of a clean lager.
Continues to carbon well in cold storage (10-15C)
Slight touch of DMS says show have boiled longer than 60mins, would say 90min better if you can afford the energy.
Further ageing has seen it clean up completely - rich and velvety |

Notes: Two variations from best practice :
1. Didnt boil enough sparge water, so had to leave Mash for extra 40mins after first run off, before able to sparge.
2. Put hops into tea strainers. Worked well for the 30g additions, but the 60g ones filled up so full that not real circulation allowed. Probably inhibited the flavour addition for the last 10 and 5 mins additions. |

| Notes: Floating thermometer broke in boil pot, 2 minutes before I was about to get to boiling. I didn't bump it or anything, it just broke on its own. Some glass and small number of iron balls got into pot. Going to proceed anyway because the iron balls (tested with a magnet, they stick to it) should be harmless, and the glass should all settle out. Thermometer part did not break, and modern thermometers don't have mercury anyway, so that's not an issue. |

Make a big 1.2L yeast starter with my a homemade stir plate!
Added 300g of the honey for 10 minute boil only.
Smell of zesty orange peel. Delightful fresh taste with with good body. Copper colour, with taste notes of freshly crushed coriander seeds. Head is aggressive on the pour due to high carbonation, but settles comfortably after a few minutes.
>malt extract can be light or extra light
>yeast should be Belgian Wit (wheat) beer type
>use light honey
Directions for 5gal batch:
O.G.: 1.056-1.060
F.G.: 1.008-1.010
Bitterness: 18BU
Colour: 4SRM (8 EBC)
Alcohol: 6.3% by volume
Add malt extract, honey, and boiling hops to 7.5L water and boil for 60 mins. Add the Irish moss, flavour hops, and half the ground coriander for 10 mins. Add the remaining ground coriander and orange peel for the final 5 minutes. Add the aroma hops for the final 1-2 minutes of boiling. Strain, sparge, and transfer immediately to 7.5L of cold water in the fermenter. Top off with additional water to make 19L. Aaerate the wort very well. Pitch the yeast when the temperature of the wort is about 21C. Ferment at about 21C for about 1 week or when fermentatino shows signs of calming and stopping.
Prime with sugar and bottle or keg when fermentation is complete. For added attraction add one whole coriander seed to each bottle when bottling (microwave them if worried). |

Notes: - FG target is 1012.6 (to hit 5.7 ABV)
- heated water to 82, put bag in and poured to mash tun. Temp was 74c. mashed in and hit 66c. So heat to 83c next time. used traditional therm with red handle. lost only .5c in mash.
- Heated sparge water to 80 but after running in and mixing is was only 65c, so next time heat to 90c.
- preboil gravity 1047, 5 points lower than last brew but I am using less grain and a litre more water, so makes sense.
-Hit OG target spot on - 1056, and fermentor vol exactly, 27 litres (WOW).
-sprinkled 05 on top and started ferm at 22c. No belt use and hopefully temp will get down to 16-18c.
-damn 05. Took till day 7 before bubbling was down to 10 seconds and when I tested gravity it was 10 10. I dry hopped and moved to secondary and the beer does taste some white dry and bitter but hopefully the gravity won't drop much further
- DH at day 4 and noticed day 5 that bad was floating. Sank it.
- bottled. 2.2 co2, 26 litres, at 16c - 128 gr sugar.
- FG 1008 (droped 2 pts in week of DH). ABV 6.3. A dissapointment as target FG was 1012.5. Tasting at bottling was good, bit dry and bitter. |

Using Wyeast 1318 instead of Whitelabs WLP067
Added 650 grams of acidulated malt to drop the PH to 5.2
Tweaked the water chemistry a little too - dropped the Baking Soda - 2:1 Calcium Chloride to Calcium Sulphate ratio
Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.
