Notes: AHA's Big Brew Day 2020 Recipe:
This year’s Big Brew recipe comes from Jackalope Brewing Co, which will brew Pangaea Proxima Polar IPA as the official commemorative beer for Homebrew Con, to be held June 18–20, 2020, in Nashville, Tenn. Given that homebrewers from all over the globe will be brewing a version of this beer on May 2, the recipe features ingredients that truly fit the theme of Big Brew.
“We want to use ingredients from all over the world to brew this beer. We decided to use the kveik yeast because what a dream that is for a homebrewer,” said Bailey Spaulding, who is a cofounder of Jackalope and will deliver the Keynote Address at Homebrew Con. “Then we landed on using New Zealand hops for the beer,” she continued, “so the yeast is from an area of the world near the North Pole, and the hops are from an area near the South Pole.”
The beer is named after Pangaea Proxima, which is a theorized future supercontinent that would form 300 million years in the future. “We thought it fit the idea well. Also, we really like the idea of bringing people from around the world together in a time when we are all so separate.”

Notes: *The efficiency has been reduced to %70 due to usual decrease in efficiency that comes with brewing very high gravity beers. We can adjust this as needed.
*In regards to mash water volume, while many people go with 1.5 qts/lb of malt, we have always had success with a lower rate of 1 qt/lb. This may need to be adjusted.
*We have targeted a pre-boil volume of 16 bbls, but if evaporation is greater than this, let me know and we can adjust.
*Super moss/Whirlfloc have different usage rates. add at at rate that has been successful for Mare Island.
*Zinc usage rate has been increased due to increased gravity.
*Ferment at 66 degrees Fahrenheit. Ferment until final gravity doesn't change for at least 3 days in a row.
-Perform diacetyl test (notes to follow) daily until there is no diacetyl detected.
*After the beer is done fermenting, and passes a diacetyl test, drop the temperature of the tank to 35 degrees F. Allow to condition until the beer tastes ready.
*Hops can be substituted based on availability, though please consult with us before making substitution, as some varieties will not be appropriate to style.
*Hop quantity is based on Alpha acid indicated and a pre-boil volume of 16 bbls.
*Treat water as Mare Island does. |

Make a big 1.2L yeast starter with my a homemade stir plate!
Added 300g of the honey for 10 minute boil only.
Smell of zesty orange peel. Delightful fresh taste with with good body. Copper colour, with taste notes of freshly crushed coriander seeds. Head is aggressive on the pour due to high carbonation, but settles comfortably after a few minutes.
>malt extract can be light or extra light
>yeast should be Belgian Wit (wheat) beer type
>use light honey
Directions for 5gal batch:
O.G.: 1.056-1.060
F.G.: 1.008-1.010
Bitterness: 18BU
Colour: 4SRM (8 EBC)
Alcohol: 6.3% by volume
Add malt extract, honey, and boiling hops to 7.5L water and boil for 60 mins. Add the Irish moss, flavour hops, and half the ground coriander for 10 mins. Add the remaining ground coriander and orange peel for the final 5 minutes. Add the aroma hops for the final 1-2 minutes of boiling. Strain, sparge, and transfer immediately to 7.5L of cold water in the fermenter. Top off with additional water to make 19L. Aaerate the wort very well. Pitch the yeast when the temperature of the wort is about 21C. Ferment at about 21C for about 1 week or when fermentatino shows signs of calming and stopping.
Prime with sugar and bottle or keg when fermentation is complete. For added attraction add one whole coriander seed to each bottle when bottling (microwave them if worried). |

Notes: HOPS: These are 2 year old hops. They've been stored well, but have lost some AA, thus the low number of 3.5%.
YEAST: Made a good starter. Pitch cool at 65˚F then set your regulator to 66˚F, let it rock for 3 days. Raise the temp to 70˚F for a couple days to encourage complete attenuation and re-absorption of fermentation byproducts. At this point, I usually crash the beer to 32˚F for a couple days then keg per my typical method, pouring the first pint a couple days later. (All above from Brulosophy)
