Chop apples fine. Start with 2 TBS cinnamon, 1/2tp cloves, 1/2 tsp nutmeg & 1/2 tsp allspice & 1/2 C sugar. Macerate overnight before adding to secondary

cooked on March 9
wort chiller down to 65F
siphoned into primary and steel mesh screened last gallon
moved to lager fridge at 53F
approx 22liters in wort
March 10 at noon - aerated and added 2 liter pre feremented yeast starter, this starter was fermented 2 weeks earlier at 55F and this chilled to 40F, rose lager fride to 55F for acclimation overnight with wort.
March 21 - diacetyl rest - raised the fridge temp to 62F - one bubble per 30 seconds when first raised temp at 55F and hydrometer reading 1.020
March 24 - still bubbling - one bubble per minute of 62F..
March 26 - racked to secondary and dropped temp to 55F, will step down to 45F over the next few days. Hydrometer reading 1.010
March 29 9am... 45F (7C)

Notes: Started fermentation at 64 deg. for 7 days than put in ice bath for 2 weeks at 50 deg. sat for another week at 64 deg.
bottled on 7-22-15 very pale color, no hop aroma and taste is low on bitterness slight corn mixed with malt flavor should be pretty good when it carbonates.
I think I would go with full ounce of 60 min. boil hops and some dry hops for aroma next time |

Notes: first you need 50% distilled water for the whole batch. on the stove method, heat 2.5 gallons of water to a boil, add everything stir stir stir, add 1 ounce of hops, boil, start your timer at 45 minutes add hops per schedule, cool in sink with ice, add cold water to carboy reaching 5.5 gallons, stir, stir, stir then ferment cold with 05 yeast around 62 for 7 days,then heat up to 68 for 2 days, transfer to cold vessel and condition cold at 36 for 7 days while carbing, best light beer I've ever made |

K-97 really seems to work best at just below 60 degrees.
Thick krausen for 2 weeks or more.
Raise temp day 10-14. Rack to secondary around day 21.
Should clear without cold-crash by day 28 and be ready to package.

Very clean and thin body. Good citrusy smell. Lemon and candy fruit taste.
Next time mash higher, me thinks.
Update: 4/30 - Got Runner up BOS at local tasting. Lots of compliments and perfect for summer. Easy drinking and very little alcohol warmth for such a high ABV beer.
Personally, I doubt I will make it again. Decided the nondescript sweet nature of mosaic is not my thing haha. Azacca seems lost in the mix. Decent fruity nose and taste, just nothing pops in my mind.
Also planning on retiring Warrior from my bittering selection. Find it much harsher than Magnum, even when used as a FWH. |
