Notes: Brewed 04/21/24. Mashed in w/15 L Boulder city, 10' rest at 130 F, raise to 147 F. Pull decoction, rest, boil 20', return to main mash; temp 153 F. Hold for 15', then raise to 165 for lauter. Sparge with water + 1.5 ml lactic acid. Forgot to add Whirlfloc and yeast nutrient! Oh well, more Rheinheitsgebot. Final gravity right on the nose, pitched ca. 700 ml of 2.5 L starter at 62 F, aerated 2' with pure oxygen. Primary fermentation at 50 F.
05/10/24: Racked to keg, gravity 1.015. Place at 65 F for diacetyl rest. Hydrometer sample clears nicely.
05/21/24: Bubble trap removed, keg moved to beer fridge at 50 F to begin slow cooling. Ultimately cooled to near 32 F.
09/06/24: Took sample; gravity 1.014. Beer has dropped bright. Moved into serving fridge and continued force carbonation. |
