Notes

Place pecans in an oven preheated to 275˚. Toast for 45 minutes, stirring every 15 minutes to ensure even cooking. When done, place nuts on a cooling rack covered with paper towels. Coarse chop them in a food processor and add them to the mash grains.

Mash grains using a single-step infusion at 154°. Ferment at 68°. Carbonate to 2.5 vol. CO2 and package.

The beer is a hit. With me and my beer loving family. A backbone of toasty pecan and subdued malty goodness for the win. Easy to brew. Easy to ferment. one of my favorite brews since getting after it. very dark russet color. The head is gentle and foamy like fresh hot chocolate. The aroma is mildly smoky but with a dark plum smell. It is not bitter at all. The flavor offers a mild molasses and pecan taste, with the particular sweetness. Going down its and incredible silky and cream body with an essence of fresh baked pecans. This is an excellent beer and I would order this out.
