The reason for the DME is that for higher gravity wort the mash efficiency is very low when using Grainfather G30 without sparge.

Nice beer, but no where near as hoppy as Emerson's Bird Dog.

Emerson's:
* hoppy aroma
* more bitter - too bitter in my opinion
* somewhat more of a hoppy flavour with obvious Citra and Simcoe citrus and pine
*lighter gold colour
*mouth feel is light to moderate

Clone beer:
We preferred this over the Emerson's, but objective is get quite closer to the Emerson's.
aroma was malty sweet with some citrus
flavour was nice balance of sweet malt and hops
somewhat less bitter than the Emerson's
same type of mouth feel as the Emerson's
darker gold colour

The next version of the recipe will increase the Citra and Simcoe particularly in the dry hop. The Munich malt will be reduced and the bitterness will be increased a little.
