-- Add water to fermenter if needed to obtain an OG of 1.054.
-- Added a little under 1/2 gallon to final volume of 3.5 gallons.
-- Fermentation began in about 12 hours despite worries of potassium metabisulfite in the water. Added Campden tablets on brew day but did not let stand for 24 hours.
-- Active fermentation. Very thick and dense krausen that did not fully dissipate after 12 days even though fermentation was clearly over. Apparently characteristic of K-97.
-- Transferred to a secondary 3-gallon carboy on day 12. Beer was cloudy (also characteristic of K-97) with some carbonation. FG was 1.010, which was the target.
-- Slight sweet flavor. This along with carbonation suggests leaving in secondary carboy for at least 2 weeks and priming with corn sugar at the low end of the recommended range.
