Notes
  • Mill the Carafa 3 separately from main grain bill.
  • Add the Carafa 3 with FINAL decoction -- don't decoct it (less burnt flavor risk).

    1) Target water profile is Munich Dark Lager. Goal pH is 5.3.
    2) Made 1-step starter (2L) due to work travel.
    3) Perform double decoction mash (see below).
    4) Add Fermcap prior to boil.
    5) Add Whirlfloc near boil end for clarity.
    6) Chill to 50F and AERATE the ferm bucket by shaking.
    7) Ferment at 50F for 7days; Raise to 62F over 14days.
    7) Perform diacetyl rest since using Lager yeast.
    8) Add PMB when kegging.
    9) Lager for 2months.

    DOUBLE DECOCTION MASHING INSTRUCTIONS

    Use 4G stainless kettle for sparge heating
    Use 2 smaller nonstick kettles for decoction

    1) Mash 7g water @144F for 30mins

    2) Pull 1/3 mash, cover main mash, bring decoction to boil while stirring constantly (takes prob 10min), boil while stirring for 5min).
    [Remove 1qt of thick mash per pound of grist (approx 1/3 of wet grain volume). Use big ladle (want liquid in decoction to prevent burning). 9.5lbs of grain means remove 9.5qts (2.37g) of mash]
    3) Add decoction back to main mash and mash at 157F for 30mins (should hit that 157F without adding flame)

    4) Pull 1/3 mash, cover main mash, bring decoction to boil while stirring constantly (takes prob 10min), boil while stirring for 5min).
    5) Add the Carafa 3 grist, add decoction back to main mash, and mash out at 170F for 10mins (should hit that 170F without adding flame)
