Scaled it back up to 6 gallon fermenter target and modified malt bill with less Peat and less Munich with 3.5 pale malt DME and ! golden light pilsen. I may change this again to get the ABV closer to 11 as I don't want to kill my yeast.
Also, using filtered Baxer tap water with a new filter that the water profile hasn't been tested yet. So I'm guessing softer it will be.
Boil off went to about 5 gallons before hop additions. 1.5 gallons was added during boil and final volume was just under 6 gallons.
OG= 1.112
