not sure how to input mash correctly. strike around 135 to hit 125, rest for 10-15 minutes, then use herms to bring up temp slowly all the way to 158.
Math adds up to get 125 in boil kettle.
125gal+ 32.25gal grain absorption = 157.25
157.25- 84.6gal mash = 72.65 sparge
72.65 - 20gal saved to add at end of boil and bring wort to 180º
52.65gal sparge
Dump trub after first 24 hours.
Dump off the yeast after beer is finished, add dry hops, soft cold crash 54 degrees for 5 days, then dump hops and cold crash. rouse up the hops each day with CO2.
