Target a pH of 5.3 - 5.4.
Add 1 lb Belgian Candi Syrup at 10 minutes and be sure to turn off burner while mixing it in. Option: Mix sugar with a bit of boiled water, cool and add a couple days into fermentation.
At knockout, add Saaz and Lemondrop hops and then whirlpool and allow to spin down for 20 minutes.
Chill to 66, pitch yeast and ferment at 68. After 4 days allow it to free rise to finish. Ferment should take about 2 weeks until TG is reached. Transfer to keg and condition cold for 2-4 weeks.
After conditioning is complete, add gelatin to clarify, if necessary.
