Hit mash temp right at 150. It stayed at 150 for 45 minutes and then dropped as low as 43 after stirring and taking a sample for pH. Hit pH of 5.41, pretty darn close to the 5.35 target. |

After 48 hours added 8z additional cane sugar that was boiled in a bit of water and cooled. Should add .03 to gravity and help dry the beer out. |

Final ABV is 8.4%. I added .5 lb of sugar mixed with some boiled and cooled water after 2nd day. This adds another .3% ABV |

Fermented out to 87% attenuation. Kept raising the temperature over time as high as 78. Once fully attenuated I brought temp slowly down to 62 and kegged.
Flavor seems wonderful, dry with some fruity esters and only a bit of phenols. |
