I really like how this turned out. In early tasting, It's a bit sharp (due to the pale chocolate), but should mellow in a couple weeks. I could see reducing the pale chocolate to 1 oz. Be advised that my water amendments are for my local water only (diluted with distilled). The ph does not compute correctly since the water calculation does not copy correctly with a snapshot recipe and does not reflect that I only treat my mash water. Tailor your water amendments to your source water for "Balanced" beer you'll be fine. You can increase the mineral content more towards "London" or "Burton" but keep the CL/SO4 ratio towards balanced to slightly malty. My water calculation is: GXX8XGX.
