(Standard Starter) Mash the crushed grains in 1.5 gallons of water at 155F for 45 minutes. Strain the grains and sparge with 1.5 gallons of water at 170F. Mix in malt extract and lactose sugar. Bring wort to a boil. Add hops and adjuncts as scheduled. Whirlpool, chill, and transfer to a clean, sanitized fermenter. Mix in enough clean, sanitized water to make five gallons. Pitch yeast at 70F and ferment at 65-70F for ten days. Pitch to Secondary Fermenter and ferment for ten more days. Bottle or keg as normal, except mix in 1 tbsp of vanilla extract with the priming sugar.

Starting with a basic American Amber recipe, the hops are tweaked to add more earthy and piney characteristics, reminiscent of the enthusiasm for outdoor exploration and hard work in Vermont. In secondary fermentation, the beer is racked onto a gallon of pure Grade B Vermont Maple Syrup; there's a possibility for the re-starting of fermentation here, which I've never experienced before, so the final alcohol will probably by higher than Brewprint calculates. Also, $50 will be donated to the Chester Andover Family Center, an amount equivalent to the ingredients cost for 5 Gallons of this beer. Google the center and see the great work they do for the community as a food bank and supplier to the needy.

Added all water agts including sodium metabisulfite, Fruit Fresh (ascorbic and citric acid) and lactic acid (in fact, CaSO4 and MgSO4 would not dissolve fully until I added the acid to the water). I then moved 1.1 gal to another pot and diluted each pot 50% with distilled water. I ended up pulling more wort from the grains because the pre-boil SG for 4 gals was 1.035 when it should have been 1.041. So I pulled a total of 5.25 gals and boiled both pots for 30 mins initially. I them topped off the main pot with wort from the secondary pot to 4 gal, and kept the excess for late addition. I then boiled or 60 more minutes, following the hop and adjunct addition schedule. After the late addition of LME and remaining partially boiled wort, and top up to 5 gals, the OG was 1.055. I added 300 ml of pomegranate molasses and 125 ml juice 4 days after initial yeast pitching, and then started the dry hopping 1 week after pitching. I dry hopped for 5 days, pulled out the hop bag, and then let the beer sit for 3 days in the near freezing garage to promote flocculation and settling through cold crashing.

Made with fermentables "on hand." 6 days in primary at 68F; another 6 in secondary at 72F; racked to keg and pressurized at 25 psi at 55 deg. F for one week. Now in the cellar at 5 psi for serving. Drinking at 55 deg F, but might experiment with a tad colder.... Original gravity was 1.063 Final gravity higher than predicted - 1.022 (ABV ~ 5.3%) Malt forward, even "sweet", with late mild bitterness; just a suggestion of of the Saaz used as a dry hop during secondary. Full mouth feel and dark color make one think of a porter or even a sweet stout, but with slightly more hop character. The rye is in the background. An enjoyable dark beer that doesn't quite fit a typical style.
