Notes: run mash rakes and recirc through vorlauf for first 15 min after mash in and then then turn of rakes and recirc and let sit another 60 min (75 min total saccharification rest)
Then vorlauf for 15 min for relatively clear wort (may be cloudier than normal due to high percentage of wheat).
Lauter and sparge very slowly taking between 60 to 90 min to collect 240 gal in kettle. Start pump on lowest speed (20 or 25%?) and restrict output to collect ~50 to 60 gal every 15 min. flow meter should read ~12 to 15 L/min
fermcap and first wort hops added to BK as it starts to fill
Note 90 min boil for DMS reduction with higher percentage of Pilsner malt

Notes: Brewed June 12 2021:
Mash in at 95°F for 10 min, then 10 more min rest at 113°F for ferrulic rest, then another 10 min at 122°F for a protein rest. Make sure not to overdue protein rest.
Heat to 147°F and hold for 5 min. Add entire mash to mash tun and top with hot water as needed to be at 147°. Pull a 1/3 decoction and heat to 152°F, hold for 10 min, then raise it to 158°F for 20 min and finally to 203°F for 5 min.
When transferred back to main mash, it should reach 167°F. Had to top up with hot water per usual to reach temp. Add 1/2 lb of rice hulls, stir and allow to rest for 30 min before initiating sparge.
Sparge went well, so 1/2 lb of hulls is sufficient. Collected 8.5 gallons at 9.5 Brix. Boiled for 30 minutes with no hops and then hopped according to schedule with the additional one hour boil. Final collection 5.5 gal at 12 Brix (1.048)
Bottled July 5, 2021 - Landed spot on @ 1.013, bottled with 3/4 cup corn sugar

Notes: Fermenting 1 gallon in carboy. Do not filter, but try not to put in much trub material.
Save some wort for speise/gyle. 3.3-4 vols Co2. Shooting for 3.5. About 22 oz - so set aside a sanitized bomber of wort in fridge. If 22 ounces, will get about 3.7 vols.
Primary ferm at 62F first few days, about 3, Then 65F maybe another 3, finish at 68F.
Boil, then cool speise. May pitch with some left over yeast or from bottom of primary. Mix all in bottling bucket, then bottle.
Secondary ferm in bottles at 68F. At least 3 weeks.
The Infusion/Decoction schedule is:
6.4 qt strike to 113 with grain - 10 min sit
Boil 1.5 qt with salt, add to grain to bring to 131 - 10 min sit
Boil 2.1 qt, add to grain to bring to 147
Take about 2.9 qt with 30-40% grain and boil, add back to bring to 161
I'm at altitude, so boiling is slightly under 212, This brings approximately 6.3qt strike, 1.6 qt, 2.2 qt, then 3.2 qt decoction.
