Notes: Our malt bill consists of 100% pilsner malt. This malt bill brings the corn flavor, light SRM, and clean malt profile found in cream ales. Our hop choice of Saaz (10 min) and Tettnanger (60 min) keep the bitterness low while bringing low spicy, herbal, and fruity notes. Using Wyeast 2565 Kolsch for slight fruit character and clean lager like profile. It has a wide fermentation temp range (56-70 F) for variable fermentation temperature control. We are targeting the light colored and malty profile for a classic fit to the cream ale style. Need lactic to bring down pH and Calcium to hit the profile for yeast happiness. |
