(Hopcat, Robobrew, etc.) Mash in at 55 for 15 minutes. Mash at 67C for 90 minutes. Mash out at 78 for 10 minutes. Fill kettle to 42 litres. Remove 7 litres for sparge. (warm slowly on stove) At mash in temp (55) add milled grains slowly. Mash per above. Two hops drops. At -60 minutes then at -10 minutes. 2nd hops is more "flavour" than aroma. Steep final hops 15 minutes then remove and cool. Aerate and yeast. Using S-04 English Ale yeast (big starter!) and doing initial fermention at 17C. (3rd brewing using 15C.) Raising to 20C after ~3 days. This is the 3rd brewing of this recipe with small tweaks. This time using CaraRed instead of CaraMunich and returning to Pale Ale as the base instead of Pilsner + Vienna. The grain wasn't properly milled on the 3rd brewing. Lost efficiency and added sugar to overcompensate. 6.3% now. But the recipe is sound. Picture of first batch uploaded. Waiting for picture of the 3rd.

Chloride forwards. Target alkalinity of 80 1ml/l of HCl, and 0.4ml/L of H2SO4 Masg pH bang on at 5.3 Preboil 27.5L at 13C 1044 which gives 1048 at 20C. THis is 95% efficiency pre boil Post boil, in fermenter 23L at 1050. 83% brewhouse eff Second brewing 21/12/20 - subbed out EKG for styrian goldings (celeia) for bittering, matching the ibus. Ended up with 23L at 1047..slightly lower efficiency (shrug). 3rd brewing 5/3/21 - ended up with 22l at 1052 in fermenter. Pitched Adnams yeast. at 18C 4th brewing 5/6/21 for the festival. Preboil 30l at 1044. Hops used as in the recipe - EKG and Fuggles. Using CML Four yeast.
