Notes: Mash at 155°F (68°C) for 45 minutes. Boil for 90 minutes. Ferment at 55°F (13°C) with a diacetyl rest when fermentation is 70 percent complete (typically, at the end of the second day of fermentation).
To reduce DMS, collect only 4.5 gallons (17 l) in your kettle. Boil down to about 4 gallons (15 l) and then at knock out (with flame off), top up with 1 gallon (3.8 l) of chilled sterile water (a gallon jug of grocery-store water is best). This should bring your wort to 185°–195°F (85–90°C) and will get your wort out of the temperature danger zone where DMS precursors can redevelop.

Fermentis Saflager 3470 (or similar yeast of Weihenstephaner origin)
BREWER’S NOTES
There are no bittering hops used in the recipe, as the large knock-out addition will provide enough bitterness. Target a mash pH of 5.3–5.4, with a wort pH of 5.15.

Notes: - Add all steeping grains to steeping bag and steep as per your
preferred steeping method. Generally, 150*-160* F for 30
minutes.
- Remove grains, bring to boil then turn off heat, and add extract.
Once extract is amply mixed, bring back to a boil.
- Once wort comes to a boil, add bittering hops as noted and start
the 50 min clock.
- Cool the wort, when the 60-minute boil is finished, cool the wort
to approximately 70° F as rapidly as possible. Use a wort chiller,
or put the kettle in an ice bath in your sink.
- Fill primary fermenter with cooled wort. Leave any thick sludge
in the bottom of the kettle.
- Add more cold water as needed to bring the volume to 5.1
gals.
- Aerate the wort. Seal the fermenter and rock back and forth to
splash for a few minutes, or use an aeration system and
diffusion stone.
- Add yeast to fermenter once the temperature of the wort is 68°F
or lower.
- Allow 3-5 days to ferment (timing is somewhat flexible). Once
fermentation ends may transfer to 2nd Fermenter for1-2 weeks.
OR - let sit on trub for 5 days then bottle.
- When Bottling, add one sugar fizz drop per 12 oz bottle.
Condition for 3-4 weeks (timing is somewhat flexible).
- OR - transfer into Keg and carbonate. |

Notes: Poner 5 galones de agua a hervir. Puedes añadir la mitad de los extractos desde que el agua está a temperatura ambiente. La otra mitad de los extractos junto con la dextrosa se añaden faltando 15 minutos para terminar de hervir, de esta manera hay menos caramelización y queda más claro el wort. Fermentar por 5 días a 68 y al sexto día subir la temperatura a 72 grados. Dejar fermentar por dos semanas completas, los últimos 4 días de fermentación subir la temperatura a 75.
Embotellar con 6 oz de priming sugar o poner en keg. |
