Notes: My efficiency was extremely high on this one with OG = 1.060 so ABV will hinge on that. I use BIAB and dunk bag in 2 gallons of 170F water for a ghetto sparge then add the liquid from tun and top to 6.5gal boil.
Simcoe bittering and Cascade late addition/dry hop combo was spot on. Tasted like a mock IPA without the lingering bitterness. My wife loved this beer and I think she drank more than me!

Notes: My best tasting recipe and is very simple.
Ale Malt is now know as Vic Ale Malt, and the hops were actually cryo hops.
Very fruity, but is extremely mild to the pallet, if you drink Carlton Draught as your daily, you will easily slip into being able to drink this without calling it cider.
Fermentation lasts approx. 10 days in my stainless fermenter. 18 - 19 degrees steady.
US-05 / Californian Ale yeast's also work fantastic with this brew.
PH mash water to 5.0 - 5.2 .
Number's are to suit No Chill. Should you be chilling the wort, I suggest adjusting the hops to hit around 32 IBU.
I always force carbonate, so I can not speak to the bottle conditioning potentials. |

Notes: Version I brewed 2/22/20 still fermenting stalled Safale 05 3/8/20. Reached 1.011 3/11. Version II Kveik Voss 3rd gen harvested fermenting like a bear 8 hours after pitch 3/8/20. But 3/11 at 1.025, dry hopped. Figure 5 gals at 66º for priming 4.2 oz azucar crema.
Version I for me desert island beer. Version II not so good.
Version III 4/29-- 5g gyp and 4g Cacl. SG to 1.013 after 5 days; DryHop. 1.010 final. Great beer result.
Version IV 11lbs BriessPaleAleMalt, 2 lbs Flaked white wheat. 1oz Simcoe for 45mins for 43 IBU. Dry hop 4 day. Final 1.010. Prime goal was 2.4 vols, but due to gallons mis-estimation 4.6. |
