Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 70F. When fermentation slows, rack to purged keg on top of bagged (and weighted, you want them submerged but not interfering with dip tube) whole hops and let fermentation finish at 70F for 5 days under a little pressure. Drop to 38F or so and force carb. Carb to 2.0vol and enjoy fresh! |

It won a Gold and Best in Class at the New Zealand Northern Region Amateur Winemakers and Brewers Association Regional Competition on the 10th October 2020, with a BJCP score of 46/50.

Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 90 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 3 days later, drop temp to 14C and dump sediment, add the second dry-hop addition for another 3 days.
Cold crash to 1C and then dump sediment .
Package at 2.6 volumes of CO2 and consume fresh. |

Notes: 60 minute boil would be fine, I doubt 90 mins is necessary.
I added 100g of dextrose at the end of the boil to ensure I hit the post boil target OG of 1.036.
Kettle sour method.
1. Mash and boil with NO hops
2. Cool to 35 degrees
3. Add Lacto
4. Wait until desired sourness is reached (check every 12 hours)
5. Add a little bit of sugar to bring it back to expected pre-boil OG
6. Boil again and add hops
7. Cool back down, pitch yeast and ferment as normal with yeast

Notes: Use large grain muslin bags for hops since they are whole cone. Remove at end of boil so whirlpool works correctly. This is why post boil pre-chill time is listed as 0 minutes even though we will whirlpool for 10 and rest for 10.
Starter: pour 0.5 L water to flask, add 11.4 oz of DME and yeast nutrient, stir until dissolved. Add water to 1.25 L, heat until pasteurized. When liquid temperature has come to room temperature pour 2 vials of yeast into flask. Cover and spin at room temperature for as long as possible.
Add honey and molasses 48 hours after pitch, when full kreusen will have been established. The lag phase will have ended and there will have been a day and a half of the exponential phase. We are starting with enough yeast for 1.071 OG, which is what the wort will be at pitch. This will ensure that the yeast present during lag get the full benefit of lag and are healthy (if we added the amount of yeast we need for the full 1.079. beer we are making to wort that is only 1.071 there won't be enough nutrient for each cell and they will be less healthy, this is what over-pitching refers to). After the beginning of the exponential phase there will be enough yeast cells to handle the addition of the honey and molasses; they will have gotten a good start on the complex malt sugars, especially maltose, and will not selectively ferment the simple sugars from the honey and molasses. This protects the fermentation from the problems that can arise from adding a significant amount of sugar adjuncts to the malt and will get the beer to the right FG (not too sweet) while maintaining the honey and molasses notes.
Add an oz of bitter dried orange peel and an oz of sweet dried orange peel to a muslin bag to secondary. Make a tea with 3 cloves and add it to secondary as well, with the hops in a muslin bag. Taste frequently and pull when desired clove flavor has been achieved. Cloves are very strong and can easily overwhelm and even ruin a beer. |
