Notes: Partial wort souring:
1. Prepare 2 litres of wort from 400g of the pilsner malts three days prior brewing (marked separate on the grain bill).
2. Boil the wort and pour into sterilised erlenmeyer flask.
3. Let the flask to cool to +50C.
4. Throw a generous handful of uncrushed pilsner malts into the flask.
5. Cover the flask with sterilised aluminum foil. Seal with rubberbands.
6. Keep the flask temperature between 40-50C for three days.
7. Pour the soured wort into a small kettle and boil for 10 minutes.
8. Add to the main wort when brewing. |

brewed this on the road, came out with more than 6 gallons at 1.080 which was a mistake shouldve boiled longer. also used some old hops which may be putting off strange flavors.

base recipe is Stone RIS clone found in byo magazine. recipe is scant, and doesnt really add up : https://byo.com/recipe/stone-imperial-russian-stout-clone/ . posted recipe is for 65% efficiency so actually less efficient than my system but i added a pound more base malt anyway to try to get over 10%abv. yeast is a little unclear wlp002 listed 65-70% attenuation so we will have to be perfect and hit 70% to get over 10%abv. but then this amounts to 1030 FG, recipe is listed at 1020. could use wlp007 english dry ale if hittin FG was a concern but i think extra sweetness in this beer is going to be ok.

Start with 13 quarts at 130 deg - should cool to 122 for a 30 min rest
Add 6 quarts boiling water – rest for 15 min
Add 3 quarts boiling water – rest for 15 min
End with 22 quarts at 156 degrees
Add 7 quarts of boiling water for mashout
Put 7 gallons through Mash tun - 28 quarts
These directions are presented by Dornbusch as general/standard Alt directions.
Dough-in at 122°F (50°C) for a 30 minute protein rest. Increase the mash temperature by adding hot water and/or direct heat to 148°F (64°C) for a 15 minute beta saccharification rest. Raise temperature again to 156°F (69°C) for a 15 minute alpha saccharification rest. Mash out by raising the temperature to 170°F (77°C).
Altbier boils are generally 90-120 min. The longer boil time assists in darkening the wort. Subsequently, hop additions will vary depending on length of boil.
Ferment the wort at 60°F (16°C) until it is about 90% attenuated. At the end of primary fermentation, reduce the fermenter temperature by about 2°F (1°C) per day until the temperature gets down to 32-40°F (0-4°C). Let it sit for two weeks to two months (the longer the better). It is recommended to rack the beer off the sediment once or twice with in the first week and purge debris out of the bottom of the fermenter. |
