Notes: This was intended to be a Sierra Nevada Pale Ale clone but the grain bill had a typo. It was supposed to contain 93% Rahr 2-Row and 7% caramel Crystal 60L. It ended quite differently with 55.8% Caramel Crystal 60L ans 44.2% Rahr 2-Row. Instead of Golden its more Chocolate in color. Also, THe hops are completely different and some are experemintal and as far as I know, can't be found. Since I am not sure what the consistancy of the grain mix was, this constitutes my best guess and is probably different than what I am actually making. |

Notes: CRUSH MALT AND ADD TO 4.8 GALLONS OF 129 DEGREE WATER FOR A 122 DEGREE PROTEIN REST FOR 30 MINUTES. ADD 1.96 GALLONS OF BOILING WATER AND HEAT FOR A 15O DEGREE STARCH CONVERSION FOR 60 MINUTES. ADD HEAT AND MASH OUT TO 168 DEGREES. SPARGE TO COLLECT 8 GALLONS OF WORT AND BRING TO A BOIL ADDING HOPS AND OTHER INGREDIENTS AS SCHEDULED. COOL TO 68 DEGREES AND PITCH YEAST. FERMENT IN PRIMARY FOR 1 WEEK THEN RACK TO CARBOY AND CONDITION FOR 2 WEEKS. KEG IN 5 GALLON CORNY WITH 68 GRAMS OF SUGAR. PRIME AND BOTTLE REMAINING BEER. |

Spices soaked in vodka for adding to secondary:
3-4 dried pasilla ancho chilies (low heat, high flavor)
3 chopped vanilla beans
3 oz vanilla sticks
Separate vodka tincture made with hot red chiles and added as needed to desired spicy heat level. Batch sized increased by 2 qts and put into a growler for secondary fermentation and used to determine how much of this tincture to add to 5 gal secondary. |
