I love this beer and needed this recipe to fill in the gaps when it isn't available, which in my area is 50 weeks out of the year.
Protein rest at 122 for 30 minutes. Heat to 156, rest for 30 minutes, then sparge. |

Notes:
Strike with 9 gallons at 166 to hit 153. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 11 gallons at 165-170
Pitch yeast at 50. Add 1vl for 2min of pure 02 prior to pitching. Ferment at 58. Raise to 65 degrees after a few days to clear diactyle.

Denny Conn's Rye IPA
Hop and Spicy!
This is another recipe created by Denny Conn and made popular around the various internet forums. It is a hoppy, refreshing, West-coast style IPA with the added spicy layer of Rye.
It is quite light in color and has an easy-drinking, medium body. The hops provide a flavorful hop base while not being too biting.
The Beer
This IPA starts with a somewhat standard bill of 2 Row and some 60L Crystal for color and a bit of caramel and sweetness. Interesting, Flaked wheat is added for a bit of texture and, along with CaraPils, helps head retention. What makes this beer somewhat unique is the addition of 3 pounds of Rye. Rye adds a spicy, somewhat crisp, and perhaps peppery flavor to this IPA.
The hop treatment is US West Coast with Columbus and Mt. Hood hops providing the clean, citrus, refreshing bitterness. The First Wort Hopping technique is supposed to impart a smooth aroma/taste addition that is comparable to about a 20 min. addition.
The hopping schedule is finished off with a dry hopping addition of Columbus hops to give this beer a refreshing taste and aroma. |

Notes: All my friends and family loved this one. Definately one to try.The IBU seem high, but magnum is very smooth and balances perfectly. Bottle condition for at least a month. My FG came out to 1.019.
Oats, milk sugar, and a hint of coffee makes one good breakfast of champions.
Age this for a few months and it gets even better.
Made it again.. Same recipe, same awesome beer. Going to submit to a local homebrew contest..

Notes: Traditional Norwegian farmhouse ale uses pale malts. Although wort is often fermented "raw" (that is, without boiling), this recipe uses a very short 10 minute boil to sanitize the wort and produce some bitterness from the hops.
The malt bill is adapted from my saison recipe. I also use Styrian Goldings hops in my saison, and since most Norwegian recipes I've found don't give much information (the closest says "any central European Nobel hop" should work), so, Styrian Goldings it is.
Except for this iteration (5/11/17), I'll be substituting Hallertau Mittelfruh, added to the mash, and Cascade and Lemon Drop added at the beginning of the boil and at 5 minutes. Remember, this is only a 10 minute boil.
This beer will be fermented warm (80F) with traditional Kveik yeast.
If I could add anything to this recipe, it might be some juniper branches.

In regards to Daytime-esque recipe be sure to have a healthy dose of wheat malt and wheat adjuncts either flaked or torrified (we are fans of the latter) but keep your S.G. in to the 1.040-1.050 range and add in some oat adjunct to the grist bill, again flaked will do but we are fans of the golden naked oats or you could use some standard oat malt for extra mouthfeel and residual sweetness, so no colored malt and focus on wheat and oats will get you to a good beverage and from there you can play with the quantities to your desire, increase adjuncts if you are going more "hazy IPA" or use 100% fermentable sugars like cane or dextrose if you are looking for something more "session". |
