I will eventually give this brew a try, if you try before me then let me know what you did differently and now it turned out so I can modify this recipe
First:
Only do main fermentables in mash (grains, wheat, oats) and then do kettle souring for a day or so and aim for a pH between 3.5-3.8 and then boil out the lacto yeast and begin your 60 minute boil with additions of other fermentables (strawberries - puree or frozen is fine, guava and hibiscus)
Hopefully you have a good strainer to filter out the strawberry seeds etc before racking. |

Notes: 3L starter built up over 3 days with an associated temp drop of 5F/day/L wort addition to ease the yeast into the lager temp range.
Mash at 150F for 75 minutes
Add 0 min hops, swirl, cover and let sit for 60 minutes.
will revisit fermentation steps here shortly.
once fermentation is complete, raise temp to 65F and dry hop for 3 days. bottle and let sit for 3 weeks at ##F.

Notes: I call this one Weihnachtsbier which is Christmas Beer in German. You will be delighted with the results of this recipe. resist temptations to throw in more honey in than the recipe says. Too much honey will make the beer too dry and more alcohol forward than it needs to be. I made the one last year with 1028 but had to switch to Nottingham because 1028 wasn't available anywhere. Make sure you use a blow off with this yeast. It's takes a while to get ramped up but when it does look out. The finished product seemed a little alcohol forward but after conditioning in the keg for a couple of days it already started mellowing out and you could get more of the maltiness coming through. Great Holiday beer. Cheers ! |

Notes: No Chill- Started a yeast starter day before and pitched 1-11-14 of 1 gal starter. 2-1-14 Added zest and guts of 3 blood oranges ( no pith ) 1/2 oz dried sweet orange zest. 2-17-14 Kegged with Gyle of 1.5 qts of original wort and pitched with slurry of Strand Brewing orange wit from bottle. 3-1-14 Tapped and tasted - Gyle worked great and tasted flavorful not sweet. Carbed @ 10 psi CO2. Will wait for it to chill down and enjoy.
3-3-14 - Cleared amazingly well. So good after it chilled down. Wish the weather was warmer for this bad ass beer. Had a New Belgium SnapShot wheat today and this was WAY better. 1st few pints were cloudy and bits of coriander, but none now. Gets better daily. |
