Notes: Single infusion mash: Achieve a target mash of 152°F (67°C). Hold for 45 minutes, then raise to mash-out temperature and begin lauter phase.
Collect enough wort to boil 6.5 gallons (24.6 liters) and boil for 60 minutes, following the hops and additions schedule. After the boil is complete, begin a whirlpool in the kettle and let the knockout hops rest in the hot wort for at least 30 minutes before chilling.
Chill the wort rapidly to 68°F (20°C). Ferment at 68°F (20°C) for one week. Cool to 55°F (13°C) to settle the yeast. Dump the yeast from the bottom of the fermentor or rack to a clean, sanitized vessel. Add the dry hops and let the beer sit for an additional four to seven days at 55–57°F (13°C). |

Notes: Note: Added 3.15 # LME to boil at 20 minutes.
Got diluted with hose water because wort chiller was dripping into the cooling wort (Obviously an accident). Pulled about 4 gallons on the liquid (from the bottom). OG was 1.035. Cooled in fermentor and set outside with airlock. In morning was about 55 degrees F. Brought inside and pitched yeast.
Ad
Had to use ferm wrap on that afternoon to bring it up to 68 degrees F. |

| Notes: Brewed 4/17/16. Forgot that I have to use a 1.1 ratio on the mash with this much grain vs a 1.2 so I had to initially dump about 1/2gal early on. Strike water was about 172 and I cooled it down to about 155F. I ended up having to add about 1q of cold water to cool it down. I recirculated and I l believe I got it down to about 150F. Sparge went well with nothing that stuck. I killed the sparge and was sitting at about 4 brix with the runoff. The in kettle efficiency was 78% which was actually way higher than I thought. I am not sure why the efficiency is so high but maybe it is due to the excess sparge and boil? I did equal out at about 11gal thought. I believe I collected about 10.25gal from the kettle. This was one of the first times I tried 10gal so it was a good experiment. The first carboy is sitting at about 1.070 which is way higher than I expected and the second carboy is at 1.060 which was diluted with about 3/4 of a gallon of water. 1st carboy was sitting in the low 60s when temp balancing was finished and the 2nd was about 68F. |
