Recommended yeasts:
* Wyeast 2024 (Bohemian Lager)
* White Labs WLP830 (German Lager)
I cannot get either of these liquid yeasts reliably in the summer, so I am substituting Saflager W-34/70. However, BF's FG calculator says the beer will get to 1.009 with W-34/70 instead of the target 1.014 with either of the liquid yeasts. The plan is to chill the beer down to 35F when its SG hits ~1.014 to stop it from going to 1.009.
Sterling hops may be difficult to find affordably. I will use Saaz only instead, if needed, and bump up IBU using CTZ.
Don't use Brewer's Friend calculated water volumes because they are too high and the beer comes out weak. I can't seem to tweak the equipment profile so that it gives me numbers I know will work so I calculate my own. (Brewfather does the same thing.)
* Purchase 6 gallons of distilled water.
* Strike water: 5 gallons
* Sparge water: 1 gallon
* Spare: 1 gallon
With grain and hop absorption (0.23 & 1.42), boil off (0.63) and negligible other losses (0), the fermentor volume will be just under 4 gallons. That's fine. If OG is a bit high, dilute with some spare distilled water.

If OG is 1.057 as expected and target FG is 1.014, schedule is:
* 56F from pitch time down to SG=1.035 (50% SG drop)
* 59F for 1.035 down to 1.024 (75% SG drop)
* 62F for 1.024 down to 1.018 (90% SG drop)
* 66F for 1.018 down to 1.014
* start chilling to stop fermentation
