Notes: 1 Vial of The Yeast Bay Saison/Brettanoymces Blend

This blend combines on of the Saccharomyces strains from the Saison Blend and two unique Brettanomyces isolates from our yeast library. The Saccharomyces yeast strain is a strong attenuator that produces a delightful ester profile of grapefruit and orange zest and imparts a long, dry and earthy finish to the beer. The Brettanomyces strains are both good attenuators that produce some fruity esters and mild funk, and add a bright character to the beer. The combination of these yeast produces a dry but balanced character with a delightful ester profile and just the right amount of funk. Approximately 58 billion cells/vial.

4/7/19: Achieved target mash temp, rested for 1 hour. Vorlaufed until clear of particulate, partially hazy. Batch sparged and ended up with 6.9 G pre boil volume. Boiled 40 minutes (adjusted from original) to hit target gravity. Rapidly cooled with copper immersion chiller to 165 deg, whirpooled hops for 15 minutes. Continued rapid chill until 70 deg.

Transferred roughly 5.25 G of cooled wort to 6 G new glass carboy. Placed in temp controlled freezer set to 67 deg. Once stabilized at target temp pitched still active 1.2 L Amalgamation II starter.

4/10/19: Temp raised to 70 deg. Fermentation activity was not observed until day 5, approximately 3" krausen. Fermentor smells of stone fruit and tropical fruit punch.

4/26/19: Fermentation still ongoing. Plan to let ride for 4 weeks before pitching dry hops and packaging.

05/07/19: Took sample (no dry-hop). Confirmed FG is 1.008 (means we're higher ABV than I wanted). But flavor and appearance was incredible.

Hazy pale straw body, aroma of barnyard sweat/funk, stonefruit, tropical fruit juice, and cereal grain. Taste followed with mild sweetness, very smooth bitterness, stone fruit, and finishes clean/dry with dough and cereal grain.

05/08/19: Plan to dry hop tonight with 2 oz of Galaxy, and 1 oz each of Citra and El Dorado. Let sit for 3-4 days, and cold crash and bottle.

5/11: cold crashed for 2 days, bottled mostly clear beer (still hazy from the spelt), got 48 x 12oz bottles. Target 2.5 vol co2, batch primed in bottling bucket with dextrose, gently stirred to incorporate.

Smell was incredible, over ripde fruit funk, juicy stone fruit, taste followed with doughy grain, and smooth mild bitterness.

Notes: Buy 2 packs of Danstar Nottingham dry yeast.

Phoenix is said to have Molasses/Chocolate/Spicy characteristics.

Mash in at 2.5 gallons of water.

Sparge with 2 gallons of water warmed to 170 degrees. This should bring the boil water level to something between 4 and 4.5 gallons.

Boil with an open lid again and a nice roiling boil like last time.

** This method worked great! Originally set for 63% conversion 1.051 OG but instead hit 77% conversion and a 1.062 OG! :)

Notes: Going to try introducing 3 things: 1) first wort hopping, 2) waiting longer in primary before dry hopping 3) using a secondary vessel.

Recipe adjustments: More bittering. VERY late addition hops. Ease off on the Amarillo tiger.

I want to make a super clear but pungent IPA of the style we enjoy in San Diego. Simple malt bill, clean bittering, and all late addition hops of Centennial for flavor, and Amarillo for the nose.

Steps:
- Brew beer & ferment.
- Wait 2 more weeks
- Transfer to secondary & dry hop.
- Wait 3 days
- Dry hop again
- Wait 3 days
- Keg & add gelatin.
- Carb up the keg

- Well, here goes again. This time I did 13lb 2-row, 1lb Carapils, 1lb C10.
- Got some belgian 550 to mix it up and do a belgian ipa.
- Going to ferment at 66º then raise it to 68º after the first couple weeks.
- Going to wait 3 full weeks before transfering to secondary and dry hopping.
- Using all fresh hops from the store (not from my freezer) and not going to freeze them. Just putting them in the fridge.
- Also trying first wart hopping.
- Also bumped the boil from 60 to 90.
- OG: 1.065 (hydro reading. Dead on)
- Blunder: I did mix up my final hops. So I added 1oz Cent and 1oz Amarillo at the 5min mark, then 1 oz Amarillo at the 0 min mark.

Notes: Cold crash 1 day, do not fine with gelatin. Add Sugar 10 min before end of Boil. Do not use filters for the hops and pitch first dry hops 2 days into active fermentation for Biotransformation. Dry hops are added the day you cold crash. Don't pay attention to the IBU count, it's way off.

Notes: This is an easy recipe to make a solid wort for a Gueuze/Lambic wort. The fun is to brew this every year. The Belgian sour mix from White Labs will do a good job getting the flavors For the style picked. Each home brewers home will create its own "house character". Once you add this to your brewing schedule you will look forward to brewing this beer every year.
A fifteenth minute boil is all you need to sanitize the wort and get some IBU's into the wort. It is the aging the beer that will challenge you!
Maltodextrin will be food for the bugs after the fermentable sugars are gone.
