Notes: Author's Tasting Notes: Silky chocolate and coffee backed by smooth caramel.
[I][ brewed this with extract, so the extract version is the real thing. The AG conversion should be dead on. Both are included. [I] used Wyeast 1450 PC - Denny's Favorite 50. This is a summer seasonal strain, originally the discontinued BrewTek CL-50, made famous by Denny Conn. Wyeast suggests 1056 as a good substitute, but [I] would use Wyeast 1028 or 1084. Mine finished out at 1.020 with Denny's - just a tad higher than it is supposed to.
Coffee and chocolate hit you up front intermingled with smooth caramel flavors that become noticeable mid-palate. Nice roasty finish rounds it out. Balanced and not cloying at all, but obviously leaning slightly to the sweeter side. Very smooth and creamy. You would think at least a little coffee or chocolate is actually used in this brew, and that is where it gets the name - Deception.

Notes: Added a hopback towards the end on the fly to get rid of some extra hops. Will decide on the dry hopping schedule after primary is complete. Color is a little darker than I wanted. I would remove the Belgian Aromatic and add Vienna or Victory malts and use Crystal 20 instead of 60. Bitterness is spot on after intial taste. I also added swapped out 8.5 of Belgian ale malt with German Munich as a test. |

Notes: The flavor of this beer is best described as like a Deschutes Brewery Inversion IPA.
Very thick and syrupy
Nice balance of malts, grain and hops, with a slightly pronounced hop finish on the back of the throat
Color is classic amber ale
Requires "5" yeasts to achieve required cell count for proper fermentation or a yeast starter equivalent to the cell count for proper pitch rate.
Strike water requires 173 degrees. |

My tweaks will be to replace the White Labs WLP028 with Imperial Yeast A31Tartan, adjusted the grain bill to use grains I have on hand (subbed GP for MO.)
