Ingredients:
2.5 Gallons Tap Water
4 Gallons Bottled Water – Note: even though this is a 5.25 gal recipe you will need extra because of the fluid loss during the boil process
1lb Caramel Vienne 20 Grain
1lb Rahr 2 Row Grain
.5lbs Carapils Grain
.5lbs Carahell Grain
6bs Golden LME
8oz Centennial Hops
1 Safale US-05
Procedure:
Start with 2.5 gal tap water, add grain to cold water and heat water to 165 degrees, and steep grains for 45 minutes
Remove grains and bring wort to boil
Remove pot from heat, add 6lbs LME, and return wort to boil
Add 1oz Centennial hops and boil for 60 minutes
Add 2oz Centennial hops and boil for 30 minutes
Add 2oz Centennial hops and boil for 10 minutes
Add 3oz Centennial hops and boil for 2 minutes
Remove pot and enough bottled water to bring the specific gravity to 1.055
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast
Fermentation:
Primary 10 days, Secondary 10 days
Kegging:
Keg and set CO2 to 20psi for 4 - 5 days
Reduce CO2 to 5 - 7psi, pour and enjoy

Notes: Bought a Melkko Presto Apple wine starter pack
and pressed 22 liters of fresh apple juice.
Follow the instructions on pack for the dried ingredients for 5 liter of water (heat at 60c, add enzymes and keep temp for 2 hours). After enzymation, pour the honey into the mix (temp around 60c)
Mix the liquid with apple juice and ferment until all the sugars have been eaten.
add potassium metabisulfite to kill the yeast and siphon to another fermentor.

Notes: Steep all grains in 150-165 degree water for 20 minutes. Remove grains from water and bring to boil. Remove from heat, add all LME/DME, and then return to boil. Start hopping schedule. Add 2.5 ounces whiskey barrel chips to secondary. Either boil for 5 minutes in 1 cup water or create a mixture of chips and your choice whiskey 1-2 weeks prior. Allow beer contact with the chips for 3-4 weeks. |
